Default Does New York State Recognize Florida's Adulthood Status of 18

If an 18 child who lived in Florida with his mother moves to, but will not be residing with his father who lives in, New York, will New York laws (of having to be 21 in order to be considered an adult) take over?

I'm confused then! What then does the age of 21 make reference to in all the sites I've found regarding liability and support?

There's a difference between being an adult at 18 (which is the default), and meeting a requirement to be free from liability in custody/support matters.

At 18, in either Florida or New York, the person is considered legally an adult - he can sue and be sued, he can open bank accounts, get credit in his name, get married without parental approval, and all of those wonderful things.

HOWEVER, when the parents of that person have gone to court and support has been ordered, it's quite common for the court to order support to continue BEYOND age 18 - usually in conjunction with and dependant upon the person going to college or other outlined activities.
