Well, if you want to be seen as a legal adult you're going to have to accept the fact that like all of us, you have to earn your dues.You have no or little credit history of your own and no history of rentals in your own name. No one in that situation is guaranteed an automatical approval regardless of their age or status. Now is the time to realize that being a legal adult is not always all its cracked up to be and that you don't always get what you want.

If you can find a landlord who will rent you an apartment in just your name, fine. But if you can't, then you're simply going to have to find a co-signer and accept the fact that emancipation would not have changed that. You can be recognized as being emancipated in your state once you are ALREADY living on your own, but it isn't SUPPOSED to be easy to get there.
