When a final paycheck is due, is a matter of state law. OhMy's answer is partially correct for his state (a FIRED employee in Texas must receive his check within 6 days) but it is not correct in CA.
Under CA law, if you fire an employee, OR if he gives more than 72 hours notice, his final paycheck has to be ready on his last day of work. If the employee resigns with less than 72 hours notice, then you have 72 hours to pay the final check.
