You could be extradited, and have your probation revoked.
The terms of your probation likely require you to notify your probation officer of even out-of-state travel, and to get permission to travel.
Extradition during the course of a vacation isn't likely at all. But lots of people end up facing probation violation proceedings for unauthorized travel.
If you have any blemish on your record, then Canada or the US may not let you enter. They have been turning back people with DWI's and reckless driving charges on drivers records. If you check with your PO and you have not had any prior probation violations then you may be able to persuade the PO to give you a permit. But you will have to give advance notice of intent to either country and get an admittance permit from that country. If it is a sex offense your chances of getting an exit permit and being admitted to either country will be very very slim. Also it is a crime in both country's for you to omit or misstate your record. Attempt to do it legally, you will be far better off.
