So it seems the best course of action would be to try to find a job or way to ensure that I could support myself without a roommate, or another possible roommate.

But to answer your question; most states do recognize another states emancipation.
You must realize that emancipation does not give you all the rights of an adult either. The biggest thing it does do is allow you to engage in a contract that a minor could get out of because they are a minor. You cannot escape due to still being under 18.
You still will not be able to drink, vote, drive other than anybody else your age could or anything else that is age specific if you are not actually old enough.
