My question involves a traffic ticket from the state of California. Can a Nevada licensee and resident do traffic school in Nevada for a citation issued in California if she's found guilty at trial? (75 in a 70 mph zone).Thanks.

You can't just go take traffic school. It has to be approved by the court. Many courts will not offer it to you after you have been found guilty. If you didn't request and were granted it while you were in court, you're out of luck anyway.
Nevada doesn't give points for out of state tickets anyhow, so it's not clear what you're gaining (other than hiding it from your insurance).
I am assuming she pleads guilty at the arraignment and requests traffic school. If she does so, and the court grants it, does it hide it from her insurance company even if there's no Nevada point(s)?
I believe it will. The court abstracts go to the DMV which is where the insurers retrieve them. Traffic school blocks that.
Generally speaking, if traffic school is an option, the courtesy notice that the ticketed person receives will mention it and will be accompanied by a list of approved traffic school providers. Traffic school can generally be done online. If the person in question wants to do traffic school, there is no good reason not to take care of it before the arraignment.
If she's gonna plead guilty, the courtesy notice itself will give her the option of traffic school, which can be taken online. If she goes to court and fights it, but loses, she can still ask for traffic school then. She will likely get it (though it is not guaranteed) and, again, can take it online. 75 in a 70 is worth fighting.
Be careful if you do online traffic school. I did one many years ago and they never sent the Certificate of Completion to the court so the infraction remained on my record. Unfortunately, I didn't know cause I assumed they had and never followed up. I just recently found out while shopping for insurance.
