Default Can You Start Work on an Employment Visa Before You Get a SSN

A friend of mine is in the country on religious R1 visa. He started working with a religious institute and applied for Ssn. For some reason there was a delay in him getting Ssn in time (took 3 months)
How's can he show that he was employed in those 3 months waiting for Ssn

If he had the right to work in the U.S. but did not have a SSN he should have applied for an individual taxpayer identification number (ITIN) from the IRS to use until such time as he obtained the SSN. The employer should not have had him start work without either the SSN or the ITIN. Did he get the ITIN?

As for proving he was employed, for what purpose does he need to prove that?

He should be able to prove it through the religious institute. Was he an employee or a volunteer there? And agree with the other question of why does he need to prove it?
