Default Former Employee Received Civil Demand Letter but Never Stole from Work

My question involves criminal law for the state of: California
Hello all. So today I got a civil demand letter from a Ronald stating that I stole or commuted fraud at target on 12/30/2016 when I used to work there but never have I stolen anything. How could they accuse me of something that I didn't do? It's Sunday so I can't call about it but I'm confused. I did leave that job after Christmas with no call no show. Does that have something to do with it? It's saying I owe 500$ to satisfy target? And off topic I still have not received my final paycheck from them! I live in California

The "how" is explained by the "did."

Until you know what it's about there's nothing anybody here can tell you.

Call whoever wrote you that letter and find out what's what.

And off topic I still have not received my final paycheck from them! I live in California
File a wage claim with the state.

    How was this letter delivered?

It's odd that you wouldnt have taken action by now to demand they pay you for your time worked. Is there some reason you have not attempted to obtain your pay?

In California, even the sleaziest employer would probably have mailed your final check within three days of your no call, no show. Failure to pay employees for time worked is a quick way to get in huge trouble in CA.
