Most if not all states require that you keep a record of your job contacts. However, in my experience, it is rare that they follow up with the contacts unless there is a real reason to believe that the contacts have been falsified. To check each contact listed would place a serious burden on the employers, who may be receiving literally hundreds of resumes for each opening.
There are occasional random audits, but the odds that you will be audited and that if so, this specific job will be audited AND that the employer will have kept a record that you did not come in are minimal at best. You have not applied for the job - you have mailed in a resume.
If you want to worry about it, fine, but you're panicking yourself over nothing.
