So I can record police during a traffic stop (video and/or audio) using a dashcam without any issues? Do I need a sticker or notice to warn passengers in my car that I am recording audio? Do I need consent from each passenger?

You may record video without any problems. But as for audio, that will depend on the circumstances and the applicable state law. In some states, you need the consent of ALL parties to a private conversation before you may record it.
