Default Can Charges Be Filed After Leaving Store for Switching Tags

My question involves criminal law for the state of: California

    What if:

One went to a store and saw a jacket on sale for $50
    Switched tag to $10
went to register, cashier said it was incorrect price, that she just rang someone up for the same sweater and that someone may have changed it. She seems suspicious, but doesn't say anything.
customer says OK, and paid with debit card and walks out.

Can charges be filed after leaving and paying for actual price of the item? If so, how long does it take to hear something? What is the worst case scenario? Can you still get arrested?

    Any answers would be appreciated.

Could you be charged with the crime you committed? Of course. Is it likely to happen? No.

Paying the full price after-the-fact does not change the fact that you committed a crime. It does make it less likely that the store will investigate your crime or attempt to bring charges.
