My question involves bankruptcy in the state of: Texas. Will the trustee care if drivers liscense is out of state? Or does he not care, becuase it's just to verify identity?

The problem is if you are a resident of Texas, which is why you would file your case in Texas, why would you be showing proof of residency of another state, being your license from apparently your state of residence.
yes they will care because having a license from another state supports the thought you are not a resident of Texas. You do not file a bankruptcy in a state you do not reside in.
The trustee will care about your residency. If you have other documentation to prove residency of at least 91 days (rent receipts, pay stubs, utility bills, etc) my guess is that the driver license won't be much of an issue (other than between you and the Texas motor vehicle licensing authorities).
So, do you think paystub and offer letter of job will suffice?
How about getting a Texas driver's license?

First, so you don't misunderstand: Question 6 on the petition gave you a box to check that says "Over the last 180 days before filing this petition, I have lived in this district longer than in any other district."
That means you have to show that you lived in the district for at least 91 days prior to filing because 91 days or more will be greater than 89 days or less anywhere else during that 180 day period.
According to another one of your posts, you filed your petition on 12/8. 91 days prior to that would make it about 9/8 or 9/7 (I'm not that good at counting days).
If your offer letter was dated prior to 9/7 and showed a start date at a particular location prior to 9/7 that should be OK if accompanied by a pay stub dated prior to 9/8 although I suggest bringing all of your pay stubs from before 9/8 through the present to show continued residency.
I also suggest you get your Texas driver license ASAP so you can have it before your meeting with the trustee.
When is your meeting with the trustee?
And don't you have rent receipts and/or utility bills from where you are living? If not, then where are you living?
Bring more than the bare minimum, rather than the bare minimum. As others have suggested, pay stubs and the offer letter might not be enough. Could be enough, but might not be enough so you don't want to take any chances.
Even changing your driver license right now is only proof that you changed your driver license right now and is not proof of residency prior to right now but might be considered as part of the overall documents that you bring.
Given we do not know where in Texas op is, having a check stub or 100 check stubs proves he got paid. A lot of people living near a states border live in the adjacent state.
If op lived in Texas for three months he should have rent receipts, utilities bills, mail recieved at a Texas address, or something to prove where he lived.
