My wife was recently threatened with exposure of nude photos of her to her employer unless she provided personal information. How can she ensure that the photos are destroyed?

she can't. There is no way to know with 100% certainty that every copy of a photo has been destroyed. If they were on the net somewhere, they will always be on the net somewhere.

There is a basic tenant in allowing nudes. Don't show your face. Guess why? She can of course attempt a lawsuit for extortion.
