My question involves an eviction in the state of: North Carolina

My tenant is now 2 months late in rent, she moved in end of Nov. I gave her the 10 day notice on 12/10, filed the summary ejectment on 12/21, our hearing is 1/14. She hasn't been in contact until today (side note, she's been evicted from her previous place for non payment of rent, previous landlord filed the summary ejectment about 6 times last year, once served, she would pay and he'd let her stay, until he finally evicted her, I found all this out after the fact.)

She's agreed to pay me rent (cashiers check) for Dec on 1/11, and then Jan on 1/18, and said she'll stay current if I let her pay the 8th of the month going forward.

My question is this. I'm thinking of accepting her cashiers check on 1/11, not cashing it (see further, until 1/18). Telling her i'm still going to the hearing on 1/14 where they should rule in favor of me, (she then has 10 days to appeal until i can file the Writ of possession for real property where the sheriff will escort her out if she doesn't leave on her own) and that if she pays me on 1/18, then I'll stop the eviction. I'm assuming if i never file the Writ then she can stay there. Do I stop the eviction by contacting the courts and telling them she paid? I'm just trying to protect myself if she doesn't pay on 1/18, I don't want to have to start the eviction process all over again to the tune of $126 and will file the Writ on 1/25. I understand the risk is i may have to repeat the entire process in 2 months, but at least she's willing to pay now to become current.
