If your friend allowed you to use their car, why would you even be asking about grand theft? There is obviously more to the story here and without that additional information, any answer you get really won't mean a thing.
Does the friend want it back? if they do, and you have refused, then it is possible that some form of larceny or embezzlement charge CAN be made against you.
Return the car or risk jail.

You mean they charged you with grand theft and so to answer your question, yes you could get charged with grand theft if "a friend gave you the keys to their car", and you took their car and disappeared for three days.

It may have taken that long for them to find you after the DA filed the charges against you. Apparently the DA or the Grand Jury felt that your intent was to deprive the rightful owner of the car and so they charged you with larceny of some stripe.
Next time, BORROW the car for what you need it for and then get it back to them ASAP.
