My question involves civil rights in the State of: California

I was working for company "yxz". I was there for about a year and one day the boss came to me and long story short, wanted to give me more responsibilities and pay me less. I was already making less then minimum wage working 48 hours a week and only making approx $2-300 a week. So obviously i quit right there any then. Before this i was planning on starting my own business, so right after i quit that job i put my business plan in action. The boss from "xyz" noticed this and immediately stopped payment on my last check in hopes that it would discourage me from starting my own business. Not only that, he accused me of stealing from the company. I then proceeded to report him to Labor Commissioner and am waiting for my hearing to take place to settle this. He then called me and told me if i wanted to he can have my check ready, i just had to go pick it up. Obviously i dont trust the guy so i did not go, i would prefer if we settled it at the hearing. So a couple days went by and i tried texting him that if he wanted to give me my check he could either mail it to me, or to labor commissioner. Thats when he told me that he has a statement from a customer saying i never gave the customer a receipt and i pocketed the money and that it was best if i just gave him what i took. This of course is false and i dont know what to do. Can he press charges or sue me for something i did not do?

notes: his sister is a lawyer so she is probably telling him what to do and what not to do.
He claims that i started my business with stolen products from his company
Someone please help me out!!
