Default How to Maintain Permanent Residency While Living Abroad

I am a green card holder and married to a US Citizen with two US kids.

My husband has been offered a position abroad which may up to 5 years.

How do I maintain my residency while we are away?
We still have a house in the US that we will be renting out while we are away and will be filing our taxes etc..

Unless you return periodically you will be considered to have abandoned your residency and will have to start over when you return.

The attorney for your husband's employer - if a US company - should be assisting you with this question. They should also refer you to an international tax consultant, etc. Filing taxes by a citizen is an obligation; there may be no taxable income once tax treaties are applied.
