You need to speak to an attorney. Even if this were you biological parent, there are no guarantees that they would end up raising your children if something happened to you. Get an appointment with an attorney and go in and talk to them about drawing up documents for who you want to care for your children in case something happens to you.
As far as your possessions go, talk to the attorney about drawing up a will stating who you want what to go to.
Who is going to see your birth certificate and see this mans name there ? You can't erase people memory. People that know you and/or your adopted dad know that he adopted you and taking him off of your birth certificate will not change that in any way. If you don't want anyone new to know he is your adopted dad, don't tell them. But, you can't control others telling people that he is your adopted dad.
You would benefit from going to counseling. You need to learn how to deal with things you can't control. What your adopted dad has been convicted of is something you can't control. No one is going to judge you based on his actions.
