I'm sorry, but you know this information wrongly. Doc and Odt documents really do not contain fonts, that's why they use PDF instead. PDFs contain fonts if you use a font which is not of the standard...
Well, this Wikipedia entry says that the patents to PDF are licensed freely, but not public domain.
