Well the worst that could happen in this case is that they could also go ahead with the threats they made regarding campaigns to save her job, which is cancelling or nullifying the offer for the fall...
Couldn't the school argue that if she turns down their offer for next year, she's then unemployed on her own accord, and therefore they have reasonable grounds to fight her being awarded UI benefits?...
