Pay her civil demand if you want to. If you don't want to incriminate yourself, it may be the lesser of two evils.
Keep in mind, though, that if she really didn't know you were stealing, she has no liability to them. If her demand isn't paid, they could sue her, but that doesn't mean they will; the odds are good that they won't.
Also keep in mind that once a civil demand is paid, there is no way to fight it. A civil demand is an offer to settle a civil claim. Voluntarily agreeing to settle on the terms they offer is something of a final decision; if you dispute the validity of their claim against you, you are expected to decline the settlement, not pay it and then dispute the claim.

If her demand isn't paid, they CAN sue her for a lot more money, including their legal costs. (Which, if I were your g/f, I'd be mad enough to dump you).
They can also file Criminal Charges against both you and her. Yep, now you are adding in court fees/fines, a permanent record that will limit yours AND her job options. And the costs of a lawyer for each, or public defender for each....
Look, while we will believe you when you say she didn't know....prosecutors and judges hear that same thing everyday. Everyday they also see teams where the two shoppers enter together and separate, one to steal, one to be a distraction to LP.
As the store said she was an accessory, you bet she will be treated as one in Criminal Court.
I would go to a Criminal Defense Lawyer and ask what you should do.
