Yes, it is "submissible" in court. Whether or not it is "permissible" in court is a different story and up to the judge.
The judge could decide that the document isn't binding in terms of interest, but demand that you return the money to your uncle immediately.
If the document didn't represent the truth of the arrangement, you shouldn't have signed it.
