Can I Be Legally Forced To Move Out At 18 with an Infant?
My question involves emancipation laws for the State of: Mississippi.
I'm turning 18 on wednesday, and my mother is kicking my son and I out on the streets, 24 hours after I turn 18, which will be Thursday. I have no where to go, and since I can not get into a legally binding contract at 18 in the state of Mississippi, can I be kicked out?

At the age of 18, you most certainly can enter into a binding contract:

All persons eighteen (18) years of age or older, if not otherwise disqualified, or prohibited by law, shall have the capacity to enter into binding contractual relationships affecting personal property. Nothing in this section shall be construed to affect any contracts entered into prior to July 1, 1976.
In any legal action founded on a contract entered into by a person eighteen (18) years of age or older, the said person may sue in his own name as an adult and be sued in his own name as an adult and be served with process as an adult.
Title 93, Chapter 19, § 93-19-13.
And yes, while it's crappy of her to do so, your mother may kick you out at 18.

However, it seems that mom wants to help the OP continue to make the adult decisions she's already making for herself.

I find that weird though, because my fiance and I went to an apartment building to see if we can rent an apartment, and the landlord said he couldn't enter either one of us into a contract because we were both under the age of 21.

Well, there goes the law right there in black and white, but to the landlord's defense, I would be hard pressed to rent my property to a couple of teenagers.
However, if you want to be completely and totally emancipated, you and your boyfriend can go get married on Thursday (I'm sure with your mother's blessing), then you guys can ride off into the sunset.

The landlord is under no obligation to rent to you. That doesn't mean he can't - it's that he chooses not to. Which is his right.
You decided to take on adult responsibilities by bringing a child into the world. Now you get to follow through on those responsibilities. In other words, you made your bed - now lie in it. It's no longer your mother's responsibility - the time to worry about how you were going to take on those responsibilities was BEFORE you got pregnant.
Once you turn 18, your mother has no further responsibility to support you. She never did have any responsibility to support your child. That's YOUR job.
