Can a Green Card holder from one of the seven banned countries safely travel back to that country for a visit, one month in length, and then return to the U.S. without having to worry about being denied entry?

Unfortunately, that's not as simple a question to answer as it should be. The initial, broad executive order is under judicial review and could ultimately be reinstated in full or in part, additional executive orders have been issued, and more executive orders could be issued. There have been any number of people who have reported being interrogated for hours upon their effort to enter the U.S., despite being LPRs or citizens, and there are some high profile cases of people (albeit foreign nationals) being denied entry.
I would be very cautious about international travel until the dust settles, and unfortunately can't tell you when that will occur.
