Judges can be changed, or serve temporarily, at any point up to trial. It would be very difficult to change the judge during the trial of a criminal case, and it's difficult to even think of a scenario where it might be attempted; perhaps in an exceptionally long trial, in which transcripts are available for review and the defendant stipulates to continue the trial to avoid having to start over following the unexpected illness or death of the presiding judge.
