Simply put the Bartender took my ID, ID had my real name/pic on it I left after he took it apparently he gave it to a police officer and now I received a charge in the mail.

You used the false ID, and it's your picture on the false ID, so... you don't have much in the way of a defense. Discuss the specifics (your age, criminal history, etc.) with a local criminal defense lawyer, and see what sort of resolutions you may be able to work out.
The only evidence the state has of me possessing it would be the bartender correct? if I deny it was me using it how could they prove it was me?
Whose picture is on it, again?
Who is the bartender going to testify was using it?
The bartender almost certainly logged the information (your description, circumstances, etc..) as well as calling the police. He will almost certainly testify against you if it comes to that. The fact that the name matches you and the picture matches the person who he took it from, it's pretty conclusive.
Well, McLovin, yeah you are screwed. How old are you. If you're under 18, you can almost guarantee to kiss off your license until you are over 18. If you are over 18, it's 12 points and you're license goes poof. The charge is a misdemeanor with a possible $500 fine/6 month jail time (the latter is unlikely) but it is going to cost you $$$ and alcohol classes and community service as well as probation are common.
If it comes out you were involved in production and/or distribution of fake ids, you could be facing serious federal penalties as well.
You need a lawyer.
Here's another thing: Many bars have these little things called surveillance cameras.
It was not at a bar, it was at an event with huge amounts of traffic and certainly no cameras
An event with a bartender, high amounts of traffic, will likely have cameras.
