Owner Sent People to Box My Stuff Up While I Still Live Here
I will do my best to keep this as complete and concise as possible!
The better part of 2yrs ago, my brother signed a 1yr lease for an apartment. The lease states that the agreement becomes a month-to-month rental after the 1yr expires (or until such time as new contract is executed). Although I was never added onto any written lease, I moved in with the full knowledge and consent of the building's owner (who I became friends with and worked for; I would work for him to cover part/all of my rent, depending upon what his buildings needed done and my availability).
As of now, the contract's 1yr term has been finished and has become "month to month", still w/ my brother's name and w/o mine; no new agreements were ever made, we just continued paying every month.
At the beginning of this month, my brother moved out w/o giving anyone any advanced notice, which leaves only me living there (I took care of July's rent, well except for $100 that my brother paid towards it for not giving me any notice lol). Throughout the month I had never expressed or implied that I intended to move (owner and I spoke about my brother moving; and, about either me paying full rent solo, or of me finding a roommate to replace my brother).
PROBLEM: I returned home yesterday after having spent a week away, without my phone. I open my door, walk in and find that my entire bedroom's contents had been moved from my room and piled in the living room, the kitchen is 100% emptied and bathroom is too)
Any advice on such a situation is extremely appreciated. I cannot believe they did this; honestly I need clarification so I know exactly what they are(and were) allowed to do in the last days of a paid month (I'm actually on the way there now after busy day, and I have no idea what to expect or what to do).

It sounds like your brother told his landlord that he was abandoning the premises and that they could take possession, and they were treating your stuff as having been abandoned. You can talk to your brother about what he did if he'll take your call, and you can track down your brother's landlord to see what he has to say. If you have already talked to either, tell us what they have to say.

I've spoken with my brother and he only told the owner he was leaving not me. And the owner's position as of yesterday was that if I want to pay for aug I have to sign new lease for myself.
(still unsure if him entering the other day was ok or not? Is he allowed to do that during July while I am clearly still living there?? I hesitate to leave my place for fear of it being entered again!)

I expect that the landlord also disagreed with your brother's claim, but you chose to omit his response to what your brother is telling you.
So... if you want to stay, sign a lease. If you don't, move.
