I Got Caught Stealing from Best Buy

My question involves criminal law for the state of: New York. I am pretty sure I got caught stealing from best buy. When I left the store the alarm system went off but no one stopped me. I think they have my license plate number. Is it true that they need to catch you at the store with the products in your hand in order to prosecute. What should I do when the police arrive. This is my first offense so I think they will let me plead to a lesser charge. What is the lesser charge if I did plead guilty to one.
