The standard guideline is that the maker of a will, or the grantee of a trust, must be of sound mind. Period.
Unless you are prepared to prove in court that she was insane, or at least incapable of making sound decisions, you have no ground to stand on. Pressuring someone to change their mind is not illegal unless the person pressured is incapable of making their own decisions. If making financial decisions in an intimate relationship were illegal, then falling in love would be illegal. If pressure were illegal, then 99% of investment "advisors" would be in jail.
