My Ex Girlfriend resides in Michigan and I reside in Oregon we have a child. I filed paperwork to establish paternity. I told her that I would like to be listed on the the baby's Birth Certificate. She told me no and also stated to me that she will fight any court order that is presented to her. My question is once paternity is established that I am indeed her baby's father, Can I be listed? Can she legally say no and keep me off permanently?.

Once paternity has been legally established, yes the court can order that the BC be amended to include you as the father.
If you also want a name change, you'll need to file for that also. The court will decide based on what is best for the child. If the child is real young, quite often the court will order a compromise of sorts, by hyphenating the mother and father's last names.
