Where did the loan agreement originate; Utah or NC? The state in which the contract was initiated (signed) holds jurisdication. If you bought the vehicle and signed the loan agreement in Utah, then they hold jurisdication.
If you're being summoned to a court in NC, I would assume that NC law trumps. If NC is a non-wage garnishment state, they cannot take your income. As the previous poster stated, they can place liens on your real property (home, vehicles, property, etc). Should that be the case, you will not be able to sell, transfer, or use a collateral, any of those properties until the claim is settled.
