I went to court for shoplifting about a month ago, but the judge withheld adjudication. i'm going for a job interview on friday, if they run my background check will this conviction appear on my record?
You can obtain your Florida criminal history, as described here, and see what the state reports. If adjudication is withheld the entry shouldn't reflect a conviction, but it may well reflect the charge and the fact that adjudication has been withheld.
