If you are properly classified as an independent contractor, you can terminate your services and state that you will not perform additional work until you get a copy of the contract. They are, of course, free to respond, "Okay then, good bye." If you negotiated some form of notice provision, that may come into play; but you have not yet indicated that you (or they) have agreed to give any sort of notice before ending the contract.
