Pawn Shop Liability for Lost Item

My question involves a consumer law issue in the State of: California
I was recently burglarized and have located my property (a diamond ring worth $8,500+) in a pawn shop. They had it 6 days when I found it. I visited the pawn shop with the police and the pawn shop showed records of their purchase from the thief. They agreed to return it to me (for $ of course because somehow they can sell stolden property). Here's the problem, the pawn shop claims they can't find the ring now. What's their liability and how do I recover?

Do you have insurance coverage for the ring? If so, the best (and almost certainly the easiest) approach may be to have your insurance company contact the pawn shop's insurance company and let them work it out.
