With rent being around $800 monthly, taking $2000 out for bills/insurances and around $300 for any extra necessities, I still have quite a bit of money left over for health insurance.

Your cart is well in front of your horse.At this rate, I'm sure my parents could care less where I go, so consent to move out would not be a problem. My dad would file the petition and I'm sure my mother would agree to it. In that case, wouldn't I apply?
You might be "sure", but until you have all the necessary signatures on all the necessary papers, you can't even begin to think about your next steps.
Get written permission to move out. Then do so. Support yourself 100% in all the ways already noted. When you've got about a year's worth of rent and grocery and insurance receipts saved up, a year's worth of excellent grades, and a year's worth of bank statements confirming that you know what you're doing, ask your parents to file the petition.
Understand that at ANY TIME after they allow you to move out, they may withdraw that consent, and if they tell you they will not file the petition, it's done. Over. End game. There is no loophole that will let you be emancipated if they do not file the petition, no matter how long you live on your own.
